Air fryer French onion potato sticks recipe

Air-fried potato sticks with mashed potatoes, mozzarella, and French onion soup mix for a retro twist. Perfect for parties or snacking. Pair with French onion sour cream dip for extra flavor.
Ingredients:
  • 600g sebago (brushed) potatoes, peeled, coarsely chopped
  • 100g (1 cup) coarsely grated mozzarella
  • 70g (1/2 cup) cornflour
  • 40g packet French onion soup mix
  • 125g (1/2 cup) Light Sour Cream
  • Finely chopped fresh chives or green shallots, to serve
  • Sea salt flakes, to serve (optional)
Instructions:
  • In a medium saucepan, submerge the potato in cold water. Bring to a boil over medium-high heat, then reduce to medium-low and simmer for 15 minutes until very tender. Drain and transfer to a bowl. Mash until smooth and let cool completely.
  • Combine cheese, cornflour, and 1 tbsp of the soup mix with the potato using your hands until fully mixed. Transfer the mixture to a medium freezer-safe plastic bag. Flatten the mixture in the bag and press into the edges. Seal and freeze for 1 hour until firm.
  • Carefully snip the bag away from the potato mixture and discard it. Transfer the potato mixture to a cutting board and slice into 2.5cm-thick pieces. Then, cut each piece in half crossways.
  • Add half of the potato sticks to the air fryer basket. Give them a generous spray of oil, ensuring all sides are well coated. Air fry at 180C for 10 minutes until crispy and golden. Transfer to a plate and repeat with the remaining potato sticks.
  • In a small bowl, mix together sour cream and the remaining soup mix until smooth and creamy. If the mixture is too thick, simply add 1-2 tsp of water and stir until well combined and your desired dipping consistency is reached.
  • Serve by placing the sour cream mixture in the center of a serving plate and surrounding it with potato sticks. Sprinkle with chives and sea salt flakes, if desired.
