Cheesy bacon broccoli casserole is a versatile dish perfect for any meal, featuring creamy textures and rich flavors.
Ingredients:
  • 2 pounds (900g) broccoli, stems removed (can use vegetable peeler to peel, then slice and eat like celery) and crowns cut into florets (about 8 cups of broccoli florets)
  • 2 strips thick-cut bacon (about 2 ounces), cut crosswise into 1/4-inch wide strips
  • 5 large eggs, beaten
  • 1/3 cup (43g) all-purpose flour
  • 1/2 cup (118 ml) heavy cream
  • 1 cup (236 ml) whole milk
  • 2 to 3 teaspoons freshly ground black pepper (1 to 2 teaspoons if using fine ground black pepper)
  • 1/2 teaspoon salt
  • 2 teaspoons Dijon mustard
  • 8 ounces (225g) cheddar cheese, grated
Instructions:
  • Cook the broccoli florets in boiling salted water for 3 to 5 minutes until fork-tender but firm. Refresh in cold water to halt the cooking process.
  • In a frying pan over medium heat, cook the bacon pieces until light brown but not crisp. Transfer to a plate lined with paper towels to soak up the extra fat. Set aside while you wait for the water to boil in step one.
  • Preheat your oven to 425°F (220°C) and generously butter a 2 1/2-quart casserole dish.
  • Prepare the egg mixture by whisking together eggs and flour in a bowl. Stir in cream, milk, black pepper, salt, and mustard. Fold in a third of the cheese.
  • In the casserole dish, layer blanched broccoli florets with a third of the cheese, scatter bacon on top, then pour the egg, cream, milk, cheese mixture over everything, ensuring it fills all spaces. Finish by sprinkling the remaining cheese on top.
