Transform broccoli haters with cheesy broccoli casserole, rich with Cheddar and cottage cheese.
Ingredients:
  • 1 head broccoli, chopped
  • 2 teaspoons vegetable oil, or as needed
  • 1 (16 ounce) container cottage cheese
  • 3 eggs
  • 0.5 (8 ounce) package shredded sharp Cheddar cheese
  • 0.25 cup butter, melted
  • 3 tablespoons all-purpose flour
Instructions:
  • Prepare a refreshing ice bath by filling a large bowl with ice water.
  • Bring a large pot of salted water to a lively boil. Add the broccoli and cook for about 3 minutes until vibrant green and tender. Drain in a colander and quickly plunge into an ice bath to halt the cooking. Drain excess water.
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish with vegetable oil.
  • In a large bowl, mix together broccoli, cottage cheese, eggs, Cheddar cheese, butter, flour, salt, and pepper until well combined. Transfer the mixture to the casserole dish.
  • Bake uncovered in the preheated oven for 60 to 90 minutes, or until a knife inserted in the center comes out clean.
