Lightened up cheesy chicken and broccoli casserole with significantly less fat and calories.
Ingredients:
  • 1 1/2 cups frozen broccoli florets, thawed, drained (from 12-oz bag)
  • 1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
  • 1 cup cut-up cooked chicken breast
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup Bisquick Heart Smart® mix
  • 1 cup fat-free (skim) milk
  • 2 eggs or 1/3 cup fat-free egg product
Instructions:
  • Preheat oven to 400°F and coat a 9-inch glass pie plate with cooking spray. Arrange broccoli, 1/2 cup of cheese, chicken, and onion in the pie plate.
  • Mix Bisquick, milk, salt, pepper, and eggs in a medium bowl using a wire whisk or fork until well combined. Transfer mixture to a pie plate.
  • Bake for 20 to 25 minutes until a knife inserted in the center comes out clean. Sprinkle with the remaining 1/2 cup of cheese and bake for an additional 3 to 4 minutes until the cheese is melted. Allow to cool for 5 minutes before serving.
