Macadamia and cardamom fudge

Irresistible cardamom fudge that you'll devour while it's still warm.
Ingredients:
  • 395g can condensed milk
  • 160g (1 cup, lightly packed) brown sugar
  • 125g unsalted butter
  • 60ml (1/4 cup) liquid glucose
  • 4.40 gm vanilla extract
  • 200g dark chocolate, chopped
  • 145g (1 cup) salted roasted macadamias
  • 1/2 tsp ground cardamom
  • Icing sugar, to dust
Instructions:
  • Prepare a square cake pan measuring 18cm at the base by greasing it and then lining it with baking paper.
  • In a saucepan over low heat, melt together condensed milk, brown sugar, butter, liquid glucose, and vanilla extract. Stir constantly for 5 minutes until the sugar is fully dissolved.
  • Turn up the heat to medium-high and cook the mixture while stirring constantly for 5 minutes until it detaches from the side of the pan. Add the chocolate, macadamias, and cardamom swiftly. Stir until the chocolate is melted. Pour into the prepared pan and let it sit for 2 hours until firm. Sprinkle with icing sugar and cut into squares before serving.
