Macadamia maple biscuit slab

Invite loved ones to savor a decadent macadamia biscuit slab together.
Ingredients:
  • 312.50 ml macadamias
  • 125g butter, softened
  • 111.38 gm maple syrup
  • 562.50 ml plain flour
  • 32.50 gm rice flour
  • 62.50 ml dried cranberries
Instructions:
  • Preheat oven to 170C (150C fan-forced).
  • In a food processor, finely chop 1 cup of macadamia nuts. Add the flours and pulse until mixed. Next, add the butter and pulse until it resembles breadcrumbs. Finally, add the maple syrup and pulse until a dough ball forms.
  • Transfer the dough onto a lightly floured surface and shape it into a ball. Place it on a large sheet of baking paper, cover with another sheet of baking paper, and roll it out to a 1cm thickness. Then, cut the remaining macadamias in half, sprinkle them together with cranberries over the dough, and gently press them in. Lift the dough with the paper onto a baking tray and bake for 30 minutes until lightly golden. Allow it to cool on the tray before serving.
  • Transfer the biscuit onto a wooden board and encourage guests to share by breaking off pieces.
