Impress this Christmas with a succulent roast chicken, flavorful stuffing, and vibrant veggies.
Ingredients:
  • 2kg whole chicken
  • 27.30 gm olive oil
  • 1kg butternut pumpkin, peeled, seeded, cut into 4cm pieces
  • 108.00 gm maple syrup
  • 400g punnet tomato medley
  • 200g punnet grape tomatoes
  • 200g green beans, trimmed
  • 20.00 ml fresh thyme sprigs
  • 18.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 2 middle bacon rashers, trimmed, finely chopped
  • 1 garlic clove, crushed
  • 82.50 ml macadamia nuts, chopped
  • 500.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 2 tsp chopped fresh thyme leaves
Instructions:
  • For the Maple macadamia stuffing: In a frying pan over medium-high heat, heat oil. Add onion and cook for 3 minutes until softened. Add bacon and garlic, cook for 4 to 5 minutes until bacon is browned. Then, add macadamias and cook for 1 minute. Remove from heat and let it cool for 10 minutes. Stir in maple syrup, breadcrumbs, egg, thyme, and season with pepper.
  • Preheat the oven to 200°C/180°C fan-forced. Place chicken on a board, stuff the cavity with the stuffing, and secure it with a toothpick. Tie the legs together with kitchen string. Transfer the chicken to a large roasting pan, drizzle with half the oil, and season with salt and pepper. Roast for 30 minutes, then lower the temperature to 180°C/160°C fan-forced and continue roasting for an additional 30 minutes, basting with juices.
  • Place pumpkin in the pan and generously drizzle with oil and maple syrup. Season with pepper. Roast for 45 minutes. Flip pumpkin, add tomatoes to the pan, and drizzle with more maple syrup. Roast for an additional 15 minutes, or until chicken thigh juices run clear when pierced with a skewer.
  • Cook beans in boiling water for 2 to 3 minutes until tender. Drain and rinse with cold water. Add to roasting pan during the last 5 minutes of cooking. Remove chicken string and serve with vegetables. Garnish with thyme sprigs.
