Sage and onion roast chicken with maple pumpkin salad

Delicious sage and onion roast chicken paired with maple pumpkin salad for a comforting family dinner.
Ingredients:
  • 1.7kg Sage and Onion Chicken
  • 80ml maple syrup
  • 2 garlic cloves, crushed
  • 21.00 gm soy sauce
  • 1/2 Kent pumpkin, seeded, cut into wedges
  • 120g Baby Spinach Leaves
  • 1 red onion, cut into thin wedges
  • 65g pepper
  • 60ml balsamic dressing
  • 100g goat's cheese, crumbled
  • Sliced Pane di Casa bread, to serve
Instructions:
  • Preheat your oven to 190°C.
  • Prepare the baking tray by greasing it, then lay the chicken on top. Roast in the oven for 1 hour.
  • As the oven preheats, prepare a large baking tray with parchment paper. Mix together maple syrup, garlic, and soy sauce in a big bowl. Add pumpkin and ensure it's well coated. Transfer the mixture onto the lined tray.
  • Roast the pumpkin alongside the chicken for 25 minutes, or until the pumpkin is tender and the chicken is beautifully browned and fully cooked. Let the pumpkin cool for 10 minutes. Then, transfer the chicken to a plate, cover it with foil, and let it rest for 15 minutes before serving.
  • Mix together the pumpkin, spinach, onion, capsicum, and dressing in a large bowl. Top with crumbled goat's cheese.
  • Present the chicken alongside a fresh salad and warm bread.
