Best-ever maple bacon roast chicken

Elevate roast chicken with crispy maple bacon for unbeatable flavor.
Ingredients:
  • 2kg whole chicken
  • 3 small red onions, halved croaaways
  • 6 fresh sage sprigs, plus extra to serve
  • 30g butter, softened
  • 200g streaky bacon, halved lengthways
  • 2 lemons, halved
  • 6 baby white potatoes, halved
  • Extra 50g chilled butter, chopped
  • 54.00 gm maple syrup
  • Gravy, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • Dry the chicken thoroughly using paper towels. Stuff the cavity with 2 onion halves and 2 sage sprigs. Rub the entire chicken with butter. Layer the bacon in a lattice pattern over the chicken breast. Secure the legs with kitchen string. Transfer the chicken to a roasting pan, cover tightly with foil, and bake for 1 hour and 15 minutes.
  • Arrange the lemon, potato, and remaining onion and sage sprigs around the chicken. Season everything well. Add a few dots of extra butter on the vegetables. Bake uncovered for another 45 minutes until the chicken is cooked and the vegetables are tender. If the bacon starts to brown too much, cover it loosely with foil. Brush the bacon with maple syrup before serving.
  • Sprinkle with additional fragrant sage leaves and pair with a side of rich gravy.
