Tropical macaroni salad with ham, pineapple, and eggs tossed in zesty Italian dressing.
Ingredients:
  • 1 (16 ounce) package whole wheat elbow macaroni
  • 1 cup Italian-style salad dressing
  • 2 (8 ounce) cans crushed pineapple, drained
  • 1 (8 ounce) ham steak, cut into cubes
  • 2 stalks celery, diced
  • 2 plum tomatoes, diced
  • 2 hard-boiled eggs, chopped
  • 0.5 onion, diced
Instructions:
  • Boil a pot of salted water, then cook elbow macaroni for 8 minutes until al dente. Drain and transfer to a large bowl.
  • Drizzle Italian-style salad dressing and crushed pineapple over the macaroni, then stir gently to combine. Add in the ham, celery, tomatoes, eggs, and onion, and gently stir again until well mixed.
  • Chill the covered bowl in the refrigerator for at least 1 hour.
