Whip up a delicious and healthy salmon pasta with veggies in no time for a stress-free weeknight dinner.
Ingredients:
  • 350g macaroni
  • 2 x 210g can salmon, drained with skin and bones removed
  • 250.00 ml baby spinach leaves
  • 3 roma (egg) tomatoes, chopped
  • 20.00 ml dill
  • 1/2 red capsicum, cut into strips
  • 1/2 green capsicum, cut into strips
Instructions:
  • Boil pasta in a generously salted, large saucepan until al dente per package directions. Drain and set aside, keeping warm.
  • Spray a non-stick pan with olive oil spray and sauté capsicum for 4 minutes until tender. Introduce tomatoes, salmon, baby spinach, dill, salt, and pepper, and continue cooking for 2-3 minutes until heated through and spinach is wilted.
  • Toss the mixture with hot pasta and serve right away, topped with grated parmesan or cheddar cheese.
