Magic bean stew

Satisfy your veggie cravings with a delicious seasonal vegetable stew.
Ingredients:
  • 2 celery stalks, sliced
  • 2 garlic cloves, thinly sliced
  • 2 bacon rashers, cut into thin matchsticks
  • 44.40 gm tomato paste
  • 2 King Edward potatoes, peeled, chopped
  • 400g can chopped tomatoes
  • 500ml vegetable stock
  • 5.00 gm caster sugar
  • 400g can mixed beans, rinsed, drained
  • 400g can kidney beans, rinsed, drained
  • Flat-leaf parsley leaves, to serve
Instructions:
  • In a large saucepan, heat oil over medium heat. Saute onion, celery, garlic, and bacon, stirring occasionally, for 6-8 minutes until onion is soft and bacon is crispy. Mix in tomato paste and cook for 1 minute. Add potatoes, diced tomatoes, stock, sugar, and seasonings, then simmer for 10 minutes until potatoes are tender and sauce thickens slightly. Finally, mix in beans and simmer for 3-5 minutes until heated through.
  • Ladle the stew into bowls, sprinkle with fresh parsley leaves, and enjoy.
