Make-Ahead Baked Sweet Potatoes

Prep and stuff sweet potato skins in advance for a quick and flavorful dinner.
Ingredients:
  • 6 medium sweet potatoes (2 1/4 pounds)
  • 1/4 cup sour cream
  • 2 tablespoons milk
  • 2 tablespoons packed brown sugar
  • 2 tablespoons butter or margarine, softened
  • 1/8 teaspoon salt
Instructions:
  • Preheat the oven to 375°F. Use a fork to pierce the sweet potatoes to release steam. Bake for about 45 minutes or until they are tender.
  • Cut thin lengthwise slice from each potato. Gently scoop out the inside, leaving a thin shell. Mash potatoes in a large bowl until smooth. Stir in sour cream and milk. Mix in brown sugar, butter, and salt until potatoes are fluffy.
  • Arrange the shells in a 13x9x2 inch ungreased rectangular baking dish. Fill the shells with the flavorful potato mixture. Cover and refrigerate for up to 24 hours.
  • Preheat oven to 400°F. Bake uncovered for approximately 25 minutes or until the potato mixture achieves a golden brown color. If filling shells right after mashing potatoes, bake for around 20 minutes.
