Make-ahead berry souffles

Prepare souffles ahead to reduce stress when entertaining.
Ingredients:
  • Melted butter, to grease
  • 220g caster sugar
  • 450g mixed berries
  • 4.40 gm vanilla extract
  • 5.30 gm lemon juice
  • 10.00 gm cornflour
  • 3 eggwhites
  • Icing sugar, to serve
  • Vanilla ice cream, to serve
Instructions:
  • Preheat the oven to 200°C. Grease four 1-cup (250ml) ramekins and coat with a sprinkle of extra caster sugar, tapping out any excess.
  • In a saucepan over medium heat, mix the berries, vanilla, lemon juice, 1/2 cup (110g) caster sugar, and 1/4 cup (60ml) water. In a separate bowl, combine cornflour with 1 tablespoon of water. Add the cornflour mixture to the berries and cook for 2-3 minutes until the fruit breaks down. Chill the mixture for 3-4 hours if desired.
  • Beat eggwhites and the remaining 1/2 cup (110g) caster sugar in a bowl until thick and glossy. Gently combine three-quarters of the cooled berry sauce with the eggwhites. Spoon the remaining sauce into the ramekins and layer with the eggwhite mixture on top.
  • Bake until puffed and golden, then sprinkle with icing sugar and enjoy with a scoop of ice cream.
