Make-ahead chicken Parmesan: Bake, freeze, thaw, and reheat for easy weeknight dinners!
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 0.33333334326744 cup bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 0.75 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 1 (8 ounce) can tomato sauce
  • 0.75 cup shredded mozzarella cheese
Instructions:
  • Heat your oven to a toasty 375 degrees F (190 degrees C) and lightly grease a baking sheet.
  • Flatten chicken breasts to a thickness of 1/2-inch or less.
  • In a bowl, add the beaten egg. In a separate bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, and garlic powder. Dip each chicken breast in egg, then coat evenly with bread crumb mixture. Transfer chicken to the prepared baking sheet.
  • Bake in the preheated oven for 10 minutes. Then, flip the chicken and cook until no longer pink in the center and juices run clear, about 10 more minutes. Allow to cool for 20 to 30 minutes before serving.
  • Place the tomato sauce and mozzarella cheese in smaller bags and freeze all ingredients in a 1-gallon resealable bag.
  • To serve: Thaw in the refrigerator overnight. Reheat chicken at 375°F (190°C) until hot and crispy, about 15-20 minutes. Add tomato sauce and mozzarella cheese on top of chicken, then bake until cheese is melted, for an extra 3 minutes.
