Creamy goulash chicken recipe

Whip up a quick and delicious meal with this freezer-friendly chicken goulash recipe for easy dinner prep in just 20 minutes.
Ingredients:
  • 500g baby red potatoes, halved
  • 400g can cherry tomatoes
  • 300ml thickened cream
  • 7.50 gm smoked paprika
  • 1 batch Freeze and save one-pot big-batch chicken (see notes for recipe)
  • Crème fraiche, to serve (optional)
  • Chopped parsley, to serve (optional)
  • Steamed broccoli, to serve (see below)
Instructions:
  • Boil potatoes in a large saucepan for 10 minutes until tender. Drain and rinse with cold water. Mix potatoes with tomatoes, cream, and paprika in an airtight container. Freeze.
  • Thaw the potato mixture as per the tips. Combine it with the defrosted chicken in a large saucepan. Cook over medium-high heat, stirring occasionally, for 5 minutes to gently reheat.
  • For added flavor, mix in the broccoli with the goulash and cook uncovered for 3 minutes until warmed through. Alternatively, you can quickly thaw the broccoli in a microwave-safe dish. Serve on the side.
