High-protein Greek yogurt parfaits with frozen fruit and granola - a quick, sweet, and nutritious make-ahead breakfast.
Ingredients:
  • 4 cups nonfat plain Greek yogurt
  • 1 cup granular sucralose sweetener (such as Splenda®)
  • 1.5 teaspoons vanilla extract
  • 2 cups granola cereal
  • 8 cups frozen mixed fruit, no sugar added
Instructions:
  • In a spacious bowl, mix together yogurt, sweetener, and vanilla extract until well combined.
  • In 8 plastic cups, add 1 cup of frozen fruit to each. Then, generously top each with a 1/2 cup of creamy yogurt mixture. Chill in the refrigerator until ready to enjoy.
  • Sprinkle 1/4 cup of granola over each cup of fruit and yogurt just before enjoying.
