Savor the exotic flavors of a quick-to-make Moroccan stew with spiced lamb, veggies, and beans.
Ingredients:
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground turmeric
  • 0.125 teaspoon curry powder
  • 1 pound ground lamb
  • 1 sweet onion, chopped
  • 2 (14.5 ounce) cans beef consomme
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (14.5 ounce) can organic beef broth
  • 1 (14.5 ounce) can organic chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 medium sweet potatoes, peeled and diced
  • 3 large carrots, chopped
  • 1 cup dried lentils, rinsed
  • 0.5 cup chopped dried apricots
  • 1 tablespoon honey
  • ground black pepper, to taste
Instructions:
  • In a large bowl, mix together cinnamon, cumin, salt, ginger, cloves, nutmeg, turmeric, and curry powder.
  • Combine lamb with fragrant spices until fully incorporated.
  • In a large pot over medium heat, melt butter until sizzling. Cook onions until soft and lightly caramelized, about 5 to 10 minutes. Add spiced lamb and cook until browned and crumbled, approximately 6 to 8 minutes.
  • Pour in the rich consommé, hearty garbanzo beans, flavorful beef broth, savory chicken broth, diced tomatoes, sweet potatoes, crunchy carrots, nutritious lentils, sweet apricots, and a touch of honey; let it come to a vigorous boil.
  • Lower the heat and let it simmer gently until the vegetables and lentils are tender, for approximately 30 minutes. Season with freshly ground pepper to taste.
