Make-Ahead Oven-Roasted Pulled Pork

Elevate weeknight dinners with versatile pulled pork that's freezer-friendly and easy to whip up into delicious dishes.
Ingredients:
  • 4 to 6 lb boneless pork shoulder roast (Boston butt)
  • 20 cloves garlic, peeled
  • 1/4 cup olive oil
  • 2 teaspoons salt
  • 2 teaspoons pepper
Instructions:
  • - Preheat your oven to 325°F. - Place the pork in a 13x9-inch (3-quart) baking dish fat side up. - Make 20 (1-inch) slits in the fat and insert a clove of garlic into each slit. - Drizzle the pork with oil, ensuring it is fully coated. - Season with salt and pepper, rubbing it into the meat for even distribution.
  • Seal the dish with a tight foil cover. Roast for 5 1/2 to 6 1/2 hours until a meat thermometer reads 190°F when inserted into the center of the roast. Take out of the oven and allow to cool for about 30 minutes before handling.
  • Use two forks to shred the meat and remove the garlic. Mix the shredded pork with some pan juices, if available, to coat it evenly. Separate the pork into 2-cup portions and place each in a freezer container or resealable plastic bag. Label with the date, refrigerate until chilled, then freeze for up to 3 months.
