Ultimate club sandwich featuring oven-roasted turkey, crispy bacon, fresh veggies, and homemade garlic aioli. Worth the effort for a delicious result.
Ingredients:
  • Juice from 1/2 lemon
  • 1 (2-3 pound) turkey breast, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 12 strips bacon
  • 1 loaf (18 slices) white sandwich bread
  • 6 slices sharp cheddar cheese
  • 3 avocados, sliced
  • 2 tomatoes
  • 1 head romaine lettuce
  • For the garlic aioli:
  • 1 bulb garlic, roasted
  • 1 cup mayonnaise
Instructions:
  • Line a baking sheet with foil and place a wire rack on top. Arrange bacon strips on the rack in a single layer without overlapping.
  • For crispy bacon: Start in a cold oven, then set to 375°F. Bake for 15-20 minutes, checking around 18 minutes for desired crispiness. Transfer to paper towel-lined plate. Let the bacon grease cool, replace foil in the baking sheet for roasting the turkey breast.
  • To roast the turkey breast, lower the oven temperature to 350°F. Lay the turkey breast on a baking sheet lined with foil, skin side facing up. Generously drizzle olive oil over the turkey breast and season with salt and pepper. Roast for 60-70 minutes until it reaches 165°F in the thickest part.
  • Prepare roasted garlic for aioli: Remove the top of a garlic bulb to expose the cloves. Place the garlic bulb cut side up on a square of foil. Drizzle with a teaspoon of olive oil and sprinkle with salt. Wrap the garlic in foil. Add it to the sheet pan with the turkey 40 minutes before the turkey is done roasting.
  • Take out the turkey breast and roasted garlic from the oven, then transfer them to a cutting board to cool down.
  • Slice the turkey breast into thin slices once it has cooled, using a carving knife. Store any leftovers in a covered container in the fridge for 5-7 days.
  • Prepare the aioli: Press the cooled garlic cloves into a small bowl, mashing them with a fork. Mix in the mayo, lemon juice, and salt. Refrigerate for up to a week.
  • Prepare the club sandwiches: Toast three slices of white bread and spread each with garlic aioli (about 2 tablespoons total). Layer the ingredients as follows: lettuce, 4-6oz sliced turkey, and 2 slices of cheese on one bread slice. Place another bread slice on top. Add 2 strips of bacon, 1/2 avocado, and 2 slices of tomato. Finish with the last bread slice.
  • To serve, slice the sandwich into halves or quarters and secure each portion with a toothpick. For leftovers, it's best to assemble the sandwiches just before serving, but you can prepare the components in advance. The turkey, bacon, and aioli can be stored in the fridge for 5-7 days.
