Indulge in a delicious chicken club sandwich with crispy bacon, pickles, and mayo for the perfect lunch.
Ingredients:
  • 1 tomato, sliced
  • 9.20 gm extra virgin olive oil
  • 6 shortcut bacon rashers
  • 6 slices light rye bread
  • 250.00 ml chopped cooked chicken
  • 61.88 gm light whole-egg mayonnaise
  • 40.00 ml finely chopped fresh flat-leaf parsley
  • 82.50 ml grated tasty cheese
  • 40.00 gm light chive onion cream cheese
  • 125.00 ml shredded cos lettuce
  • Pickled baby cucumbers, to serve
  • Potato chips, to serve
Instructions:
  • In a large frying pan over medium-high heat, sizzle the bacon slices for 2 to 3 minutes per side until delightfully crisp. Place them on paper towels to drain.
  • In a small bowl, mix chicken, mayonnaise, and parsley. Preheat grill to high. Lay bread slices on a tray. Grill for 2 minutes on each side until toasted. Take four bread slices off the grill. Spread chicken mixture on the remaining 2 bread slices. Top with grated cheese. Grill for 1 minute until cheese is melted.
  • Spread cream cheese on two slices of bread. Layer with tomato, bacon, and chicken mixture on one slice. Top with lettuce and the other slice of bread. Finish by adding pickled cucumbers, securing with skewers, and serving with crisps.
