The Ultimate Chicken Casserole

Whip up a delicious chicken, broccoli, and water chestnut casserole for a delightful family dinner!
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds chicken breast tenders (not breaded)
  • 2 packages (10 ounces each) frozen broccoli spears, thawed and drained
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 1 can (10 3/4 ounces) condensed cream of chicken soup
  • 1/2 cup reduced-fat mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 cup milk
  • 1/2 teaspoon curry powder, if desired
  • 1/2 cup shredded reduced-fat Cheddar cheese (2 ounces)
  • 1/2 cup dry bread crumbs
  • 1 can (2.8 ounces) French-fried onions
  • 1/4 cup slivered almonds
Instructions:
  • Preheat the oven to 350°F. In a large skillet over medium-high heat, heat some oil. Cook the chicken for 5 to 6 minutes, stirring occasionally, until it is no longer pink in the center. In an ungreased 13x9x2 inch baking dish, layer the broccoli spears, water chestnuts, and cooked chicken.
  • Combine the soup, mayonnaise, lemon juice, milk, and curry powder, then pour the mixture over the chicken and broccoli. Top with cheese, breadcrumbs, onions, and almonds.
  • Bake covered for 30 minutes, then uncover and continue baking for an additional 15 minutes until broccoli is tender.
