Buffalo Chicken Lasagna: Creamy blue cheese sauce, spicy chicken, layered with noodles for the ultimate game day dish. Ideal for potlucks too!
Ingredients:
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1/4 cup all-purpose flour
  • 1 quart whole milk
  • 8 ounces blue cheese crumbles
  • 1/2 teaspoon kosher salt
  • Ground black pepper
  • 4 cups cooked, shredded chicken
  • 1 cup hot sauce
  • 8-ounce package oven-ready lasagna noodles
  • 8 ounces shredded mozzarella cheese
Instructions:
  • Preheat the oven: Set the oven temperature to 400˚F.
  • Prepare the blue cheese sauce: Melt the butter in a saucepan over medium heat to create a roux. Stir in the flour until bubbly and slightly golden, about 1 to 2 minutes. Gradually whisk in the milk until smooth. Bring to a simmer and cook, stirring frequently, until slightly thickened and creamy, about 10 to 15 minutes. Remove from heat and mix in the blue cheese, salt, and black pepper until cheese melts. Adjust seasoning to taste with more salt and pepper if desired.
  • Coat the chicken evenly by tossing it with the hot sauce in a separate bowl.
  • Build the lasagna layers in the 9x13-inch baking dish as follows: start with a bit of cheese sauce on the bottom, then place one layer of pasta sheets. Spread a third of the shredded chicken mixture, approximately 1 cup of blue cheese sauce, and about 1/2 cup of mozzarella cheese. Repeat this two more times. End with a final layer of noodles, the remaining blue cheese sauce, and the remaining mozzarella.
  • For a perfect lasagna bake: Initially cover the dish with foil and bake for 35 minutes. Later, uncover it and bake until bubbly and slightly browned around the edges, for an additional 10 minutes. Let it cool for about 15 minutes before serving.
