Spicy chicken and veggie lasagna with three cheeses: ricotta, mozzarella, and blue cheese.
Ingredients:
  • 1 pound skinless, boneless chicken breast - cooked and diced
  • 4 cups spaghetti sauce
  • 2 tablespoons hot sauce
  • 2 tablespoons apple cider vinegar
  • 1 small green bell pepper, chopped
  • 1 (6 ounce) can mushrooms, drained
  • 1 egg, beaten
  • 1 (15 ounce) container ricotta cheese
  • 12 uncooked lasagna noodles
  • 2 cups shredded mozzarella cheese
  • 0.75 cup crumbled blue cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a lasagna pan.
  • Combine chicken, spaghetti sauce, hot sauce, vinegar, water, garlic powder, onion, bell pepper, and mushrooms in a large bowl. Mix well and set aside. In a medium bowl, combine egg beat and ricotta cheese.
  • Start by evenly spreading 1 cup of the chicken/spaghetti mixture in the bottom of the pan. Then layer lasagna noodles on top, followed by another 1 1/2 cups of the chicken mixture. Spread half of the ricotta/egg mixture over this layer and sprinkle half of the mozzarella cheese on top. Continue with another layer of noodles, then 1 1/2 cups of the chicken mixture, the rest of the ricotta mixture, and the remaining mozzarella. Finish with one last layer of noodles and the remaining chicken mixture on top.
  • Bake covered at 350 degrees F (175 degrees C) for 70 minutes. Sprinkle with crumbled blue cheese, then bake uncovered for 5 more minutes.
  • Let the dish rest, covered, for 15 to 20 minutes before serving.
