Buffalo Chicken Baked Mac & Cheese

Cheesy buffalo chicken mac and cheese casserole with crispy breadcrumb topping.
Ingredients:
  • 2 boxes (6 oz) Annie's™ Organic Shells & Real Aged Cheddar Macaroni & Cheese
  • 4 tablespoons butter, cut into tablespoons
  • 2 cups chopped cooked chicken
  • 1 cup shredded mozzarella cheese (4 oz)
  • 3/4 cup milk
  • 1/4 cup Buffalo wing sauce
  • 1 cup Progresso™ Plain Panko Crispy Bread Crumbs
  • 3 tablespoons butter, melted
  • 4 oz crumbled blue cheese, if desired
Instructions:
  • Preheat oven to 375°F and generously spray an 8-inch square (2-quart) baking dish with cooking spray.
  • In a 4-quart saucepan or Dutch oven, bring 2 quarts of water to a boil. Add pasta from both boxes and bring back to a boil. Cook for 9 to 11 minutes, stirring occasionally, until pasta is tender. Drain and return pasta to the pan, then remove from heat.
  • Melt 4 tablespoons of butter in the pan. Mix in the chicken, mozzarella cheese, milk, Buffalo wing sauce, salt, and both cheese packages into the pasta. Transfer the mixture to a baking dish.
  • Combine bread crumbs with butter in a bowl and evenly spread over the pasta mixture in a baking dish. Bake for 24 to 28 minutes until bubbly and the bread crumbs turn golden brown. Lastly, sprinkle with blue cheese before serving.
