Whip up a zesty rhubarb compote for easy, delicious breakfast parfaits layered with graham cracker crumbs and crushed walnuts.
Ingredients:
  • 1 pinch salt
  • 2.5 cups chopped rhubarb
  • 0.25 cup water
  • 0.25 cup honey
  • 1.25 cups graham cracker crumbs
  • 1 (32 ounce) container vanilla Greek yogurt
  • 5 tablespoons crushed walnuts
Instructions:
  • In a saucepan, simmer rhubarb with water and salt until softened, about 6 to 8 minutes. Stir in honey and cook until thickened, about 2 to 3 minutes.
  • Prepare your work station by lining up five 12- to 16-ounce jars. Spoon 2 tablespoons of the rhubarb mixture into the bottom of each jar. Follow with 2 tablespoons of cracker crumbs and then top with 2/3 cup of yogurt in each jar. Divide the remaining rhubarb mixture and cracker crumbs evenly over the parfaits. Sprinkle 1 tablespoon of crushed walnuts on top of each parfait. Seal the jars and refrigerate until you're ready to enjoy.
