Make-Ahead Slow Cooker Mashed Potatoes

Prepare these delicious make-ahead crockpot mashed potatoes for a stress-free holiday meal. Just prep in advance and let your slow cooker do the work on the big day.
Ingredients:
  • 5 pounds potatoes, peeled
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup half-and-half, or more as needed
  • 0.33333334326744 cup chopped fresh chives
  • 2 large egg whites, slightly beaten
  • 2 teaspoons onion powder
  • salt and ground black pepper to taste
  • nonstick cooking spray
  • 0.75 cup butter, divided
Instructions:
  • In a large pot, add potatoes and cover with water. Bring to a boil over high heat. Reduce heat to medium-low and simmer until tender, for about 20 to 25 minutes. Drain the potatoes, then return them to the pot. Stir over medium heat until dry, for 1 to 2 minutes.
  • Use a hand mixer to blend the potatoes until smooth, then combine with cream cheese, half-and-half, chives, egg whites, onion powder, salt, and pepper until fully mixed.
  • Prepare the slow cooker by generously spraying it with nonstick spray. Spoon in the mashed potatoes and distribute evenly. Distribute 1/2 cup butter by cutting it into 8 pieces and scattering them over the potatoes. Let the potatoes cool down. Cover with the lid and refrigerate overnight or until you are ready to reheat.
  • Allow the potatoes to rest at room temperature for approximately 3 1/2 hours after taking them out of the refrigerator.
  • Cover the pot with a towel to catch condensation. Cook on Low heat, stirring occasionally, for 2 1/2 hours. Add the remaining 1/4 cup of butter gradually, stirring in 1 tablespoon at a time; continue cooking for an additional 30 minutes.
