Make-Ahead Spinach Salad in a Jar

Meal prep salads with spinach-packed jars for fresh, easy lunches all week. Ideal for leftover quinoa!
Ingredients:
  • 5 (16 oz) pint jars
  • 2 cups water
  • 1 cup quinoa
  • 3 tablespoons fresh squeezed orange juice
  • 1 tablespoon white wine vinegar
  • 0.25 teaspoon grated orange zest
  • 0.25 teaspoon salt
  • 0.25 teaspoon curry powder
  • 0.125 teaspoon black pepper
  • 0.25 cup light olive oil
  • 0.66666668653488 cup dried cherries
  • 0.5 cup crumbled goat cheese
  • 5 cups tightly packed fresh spinach
  • 5 tablespoons chopped walnuts
Instructions:
  • In a saucepan, bring water and quinoa to a boil. Simmer covered on medium-low heat until quinoa is tender, about 15-20 minutes. Let it cool down.
  • Combine orange juice, vinegar, orange zest, salt, curry powder, and pepper in a small bowl. Gradually pour in olive oil while whisking until fully incorporated.
  • Arrange 5 pint jars in a neat line.
  • Drizzle 1 1/2 tablespoons of dressing into the bottom of each jar. Layer 1/2 cup cooked quinoa into each jar, then add 2 tablespoons of cherries. Sprinkle 1 1/2 tablespoons of goat cheese on top of the cherries. Gently press down 1 cup of spinach into each jar to remove air pockets, filling them to the brim. Finally, garnish each jar with 1 tablespoon of walnuts. Cover jars and chill until serving.
