Effortlessly elegant Feta Spinach Breakfast Wraps, perfect for any day of the week! Ideal for meal prep or weekend indulgence.
Ingredients:
  • 4 scallions, thinly sliced
  • 8 large eggs, well beaten
  • Kosher salt and freshly ground black pepper, to taste
  • 4 10-inch flour tortillas
  • 3 ounces (about 3 cups packed) fresh baby spinach leaves
  • 1/2 cup (4 ounces) crumbled feta cheese
Instructions:
  • Cut four 12-inch squares of parchment paper and have them ready to use.
  • Prepare the scrambled eggs: Heat oil in a large nonstick skillet over medium heat. Sauté scallions and oregano for 2 to 3 minutes until scallions slightly soften. Add eggs, salt, and pepper. Continuously stir until eggs start to set but remain slightly runny.
  • Incorporate the spinach: Remove the pan from the heat and gently mix in the spinach. Return the pan to medium-low heat and cook for an additional 1 to 3 minutes, just until the spinach begins to wilt (some leaves may still be crisp) and the eggs are cooked. Transfer the eggs to a serving platter and set aside. Clean the skillet.
  • Heat the cleaned skillet over medium heat until hot. Warm the tortillas one at a time for 15 to 20 seconds on each side with tongs until softened and lightly browned. Stack on a plate and cover with a tea towel to keep warm.
  • Prepare the wraps by spreading a quarter of the egg filling about 2 inches from the bottom edge of a tortilla. Sprinkle with 2 tablespoons of feta cheese. Fold the bottom edge over the filling, then fold in the sides and roll tightly to create a neat bundle. Place the wrap seam-side down on parchment paper and roll it up. Repeat with the remaining tortillas and filling. Keep the wraps in the refrigerator until ready to serve.
  • Preheat your oven to 350°F.
  • To reheat, place the wraps in their parchment paper in a baking dish and warm in the oven for 15 to 20 minutes until hot. Remove from the oven, unwrap, cut each wrap in half on the diagonal, and serve. For a quicker option, warm individual wraps in the microwave.
