Mandarin and pancetta salad

Simple and delicious appetizer ideal for hosting guests.
Ingredients:
  • 82.50 ml fresh mandarin juice
  • 56.88 gm light extra virgin olive oil
  • 14.40 gm honey
  • 5.90 gm Dijon mustard
  • 150g pancetta, cut into batons, fried crispy
  • 1/2 radicchio, leaves separated
  • 1/4 butter lettuce, leaves separated
  • 1/4 cos lettuce, leaves separated
  • 62.50 ml fresh mint sprigs
  • 2 mandarins, peeled, sliced and segmented
Instructions:
  • In a jar, mix mandarin juice, oil, honey, and mustard. Season with salt and pepper, then shake vigorously.
  • Arrange the pancetta, radicchio, lettuce, mint sprigs, and segmented mandarins elegantly on a platter. Drizzle with the dressing and gently toss to combine.
