Quick and simple dessert to satisfy your sweet tooth after any meal.
Ingredients:
  • 1.25 gm ground ginger
  • 40.00 gm caster sugar
  • 40.00 ml fresh mandarin juice (see note)
  • 3 mandarins, segmented
  • 6 ready-made fresh pancakes, halved, warmed (see note)
  • 58.75 gm sour cream
  • 62.50 ml chopped pecans, toasted
  • Icing sugar, for dusting
Instructions:
  • In a small frying pan over medium-low heat, melt butter. Add ginger and cook until fragrant, about 30 seconds. Stir in sugar and mandarin juice, cooking for another minute until slightly reduced. Finally, add mandarin segments and cook for an additional minute until heated through.
  • Spread a layer of tangy sour cream on each pancake half. Evenly distribute the mandarin mixture and pecans between the pancakes. Gently fold the pancakes to enclose the fillings. Serve with a sprinkle of icing sugar on top.
