Delectable mandarin lemon curd layered with buttery biscuit crumbs in delightful individual meringue pies.
Ingredients:
  • 8 orange cream biscuits
  • 165g butter, melted, cooled
  • 3 eggs
  • 160g (2/3 cup) caster sugar
  • 2 Amour mandarins, rind finely grated, juiced
  • 2 lemons, rind finely grated, juiced
  • 6 Amour mandarins, extra, peeled, thickly sliced
  • 300ml ctn thickened cream
  • 2 egg whites
  • 100g (1/2 cup) caster sugar
Instructions:
  • Pulse the biscuits in a food processor until finely crushed. Pour in 40g of melted butter and blend until thoroughly mixed. Split the biscuit mixture evenly among four 500ml (2 cups) heatproof jars.
  • Combine eggs, sugar, melted butter, mandarin rind, mandarin juice, lemon rind, and lemon juice in a large microwave-proof glass bowl. Microwave on Medium, stirring every minute, until a smooth thick curd forms, about 5 minutes. Cool completely before using.
  • Arrange the additional mandarin slices along the inner walls of the jars.
  • Whisk cream and half the curd in a bowl with electric beaters until soft peaks form. Divide the cream mixture among the jars, layering with mandarin slices against the side of the jar. Finish by topping with the remaining curd.
  • Whisk the egg whites with electric beaters until soft peaks form, then gradually beat in the sugar until thick and glossy. Divide the meringue among the jars and caramelize using a blowtorch.
