Satisfyingly balanced citrus cake for a crowd-pleasing finish.
Ingredients:
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup sugar
  • 1/3 cup shortening
  • 3/4 cup milk
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 egg
  • 1 can (15 ounces) mandarin orange segments, drained
  • Whipped topping, if desired
Instructions:
  • Preheat the oven to 350°F. Grease and lightly flour a 9x1 1/2-inch round pan with shortening.
  • Using an electric mixer, blend all ingredients (except for orange segments and whipped topping) in a medium bowl on low speed for 30 seconds, scraping the sides of the bowl as needed. Increase speed to high and continue mixing for 3 minutes, occasionally scraping the bowl. Pour the batter into the pan and evenly place orange segments on top, saving a few for decoration.
  • Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan to a wire rack. Allow to cool completely, about 1 hour. Top with whipped topping and decorate with orange segments.
