Easy and delicious mandarin orange cake made with cake mix and canned oranges, topped with creamy pineapple frosting.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 1 (11 ounce) can mandarin orange segments
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (3.5 ounce) package instant vanilla pudding mix
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing and flouring it.
  • In a large bowl, mix together cake mix, mandarin oranges with juice, eggs, and oil until smooth using an electric mixer. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes until a toothpick comes out clean from the center. Allow to cool for 30 minutes before serving.
  • Combine pineapple with its juice, whipped topping, and dry pudding mix in a large bowl until well mixed. Then, spread it over the cooled cake.
