Indulge in mango season with these delicious cupcakes - great for dessert, picnics, or a sweet treat any time of day.
Ingredients:
  • 1 quantity classic cupcake recipe
  • 63.75 gm desiccated coconut, toasted
  • 250.00 ml mango puree
  • 375.00 gm pure icing sugar, sifted
  • 40.00 ml mango puree
  • 20.60 gm warm milk
Instructions:
  • Incorporate 1/2 cup of coconut into the mixture.
  • Reduce the milk to 1/4 cup and gently fold in the mango puree.
  • Proceed with baking the cupcakes as outlined in step 3.
  • Prepare the icing by combining icing sugar, mango puree and milk until smooth. Generously spread the icing over the cupcakes and top with the remaining 1/4 cup of coconut. Serve and enjoy!
