Try our irresistible mango coconut bliss balls for a refreshing snack twist.
Ingredients:
  • 120g tub diced mangoes in juice
  • 4 Weet-Bix, crumbled
  • 40.00 ml white chia seeds
  • 42.50 gm desiccated coconut
  • 125.00 ml finely chopped dried mango
  • 14.40 gm honey
Instructions:
  • Strain the diced mango, saving the juice. Blend Weet-Bix, diced mango, chia seeds, and ¹⁄³ cup coconut in a food processor until nearly smooth. Include dried mango, honey, and 1 tablespoon of the saved mango juice. Pulse until mixed, adding more juice if needed.
  • Take the rest of the coconut and place it in a small bowl. With moist hands, shape 1 level tablespoon of the mixture into a ball, then coat it with coconut. Place on a plate and continue with the rest of the mixture and coconut. Serve.
