Ingredients:
  • 550g (2 1/2 cups) sugar
  • 750ml (3 cups) sparkling white wine
  • 60ml (1/4 cup) fresh lime juice
  • 1 vanilla bean pod, halved (optional)
  • 4 mangoes, peeled, flesh sliced
  • 4 nectarines, quartered, stones removed
  • Thick cream or vanilla ice-cream, to serve
Instructions:
  • In a saucepan, mix sugar, sparkling white wine, lime juice, and vanilla bean. Heat over medium heat, stirring until the sugar dissolves. Bring to a boil, then remove from heat and allow it to cool slightly.
  • In a ceramic or glass dish, arrange the mangoes and nectarines, then drizzle with the warm syrup. Cover with plastic wrap and refrigerate overnight. Serve cold with cream or ice-cream.
