Mango and red capsicum salsa

Delicious salsa pairs perfectly with grilled chicken, pork, fish, or prawns.
Ingredients:
  • 2 firm ripe mangoes, stone and skin removed, diced
  • 1 small red capsicum, seeded, diced
  • 1/2 small red onion, finely chopped
  • 62.50 ml chopped fresh mint
  • 21.00 gm lime juice
  • 2 tsp mirin
  • 1 tsp finely grated ginger
Instructions:
  • Combine the mango, capsicum, onion, and mint in a medium bowl.
  • Combine the lime juice, oil, mirin, and ginger in a bowl, then gently mix into the salsa. Allow it to rest for 10 minutes to enhance the flavors before serving.
