Mango Chicken Kabobs

Grilled mango-marinated chicken skewers with optional mango chutney. Perfect for summer appetizers. Delicious!
Ingredients:
  • skewers
  • 0.25 cup olive oil
  • 2 teaspoons minced fresh ginger root
  • 1 teaspoon lemon juice
  • 1 teaspoon orange juice
  • 1 teaspoon brown sugar
  • 1 pinch white sugar
  • 4 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 3 mangos - peeled, seeded, and diced
Instructions:
  • Combine olive oil, ginger root, lemon juice, orange juice, brown sugar, and white sugar in a shallow container. Add chicken breasts to the mixture and refrigerate for at least 30 minutes to marinate.
  • Preheat the grill to high heat. Season the chicken with salt, then thread the chicken and mango onto skewers in alternating layers. Dispose of the marinade.
  • Prepare the grill grate with a delicate touch of oil. Grill the skewers for 15 minutes, making sure to flip them over regularly, until the chicken juices run clear.
