Succulent mango and spicy serrano peppers elevate a chunky salsa in a smooth, flavorful base.
Ingredients:
  • 3 serrano peppers
  • 0.25 cup coarsely chopped red onion
  • 1 bunch cilantro, chopped
  • 2 small tomatoes, chopped
  • 3 tablespoons rice vinegar
  • 1 mango - peeled, seeded and diced
  • 0.5 cup chopped green bell pepper
  • 0.5 cup fresh corn kernels
  • 0.25 teaspoon ground cumin
Instructions:
  • Remove the serrano peppers' stems, then combine them (with seeds), red onion, half the cilantro, and half the tomatoes in a food processor. Blend until smooth, then add rice vinegar and olive oil and pulse until combined.
  • Combine the rest of the cilantro, tomatoes, mango, green bell pepper, corn, cumin, and sugar in a medium bowl. Mix in the serrano pepper mixture. Season with salt and black pepper to taste. Refrigerate for 1 hour before enjoying.
