Mango jelly with baked oranges

Elevate jelly with baked oranges for a decadent dessert, perfect with whipped cream or custard.
Ingredients:
  • Vegetable oil, to grease
  • 3 large oranges, peeled, cut into 1cm pieces
  • 1 x 85g pkt mango-flavoured jelly crystals (Aeroplane brand)
  • Whipped thickened cream, to serve
  • Melted butter, to grease
  • 5 large oranges, peeled, thickly sliced
  • 55g (1/4 cup, firmly packed) brown sugar
  • 40g butter, chopped
Instructions:
  • Lightly grease six 125ml (1/2-cup) metal or ceramic moulds with vegetable oil. Arrange the moulds on a tray and distribute the orange pieces evenly among them.
  • Prepare the jelly according to the instructions on the packet and allow it to cool to room temperature. Distribute the jelly evenly among the molds, then chill in the fridge for 2 hours, or until set.
  • For the baked oranges, start by preheating the oven to 200°C. Brush a large ovenproof dish with melted butter for greasing. Arrange orange slices in the dish, slightly overlapping. Sprinkle sugar evenly and add dots of butter on top. Bake for 35 minutes until edges brown. Rest for 15 minutes before serving.
  • To present, gently invert jelly onto plates and accompany with roasted oranges and a spoonful of fresh cream.
