Mango macadamia ice-cream

Whip up a luscious mango macadamia dessert without an ice-cream machine.
Ingredients:
  • 2 medium mangoes, peeled, cut into 1cm pieces
  • 125.00 ml unsalted macadamia nuts, chopped
  • 16.25 gm shredded coconut
  • 2 litres vanilla ice-cream, softened (see note)
  • Chopped mango, to serve
Instructions:
  • Gently mix mango, nuts, and coconut into the ice-cream. Transfer the mixture into a container or a springform pan or loaf pan. Smooth the top, cover with plastic wrap to prevent ice crystals, and freeze overnight until firm. Let the ice-cream sit out for 5 minutes before serving, and enjoy with chopped mango.
