Mango mascarpone tarts

Indulge in luxurious no-bake mango tarts infused with ginger wine for a decadent treat.
Ingredients:
  • 250g pkt Ginger Nut biscuits
  • 100g unsalted butter, melted
  • 150g mascarpone
  • 60ml (1/4 cup) pouring cream
  • 40g glace ginger, finely chopped
  • 2 mangoes, peeled, cut into 1cm pieces
  • 30.00 ml ginger wine
Instructions:
  • Grease 8 round 6.5cm fluted tart tins with removable bases. Pulse the biscuits in a food processor until finely crushed. Add the butter and pulse until combined.
  • Evenly distribute the biscuit mixture into the tins, pressing it firmly over the base and sides. Chill in the fridge for 1 hour.
  • Whisk the mascarpone and cream in a bowl until they form firm peaks, then gently stir in the ginger.
  • Marinate the mango in wine in a bowl for 15 minutes.
  • Remove the tarts from the tins and fill them with the rich mascarpone mixture, then generously layer with the sweet mango topping.
