Mango mousse with wonton crisps

Try this delicious Asian-inspired mango and coconut dish with crispy wontons for a fantastic starter option.
Ingredients:
  • 8 wonton wrappers
  • 1 egg white, beaten
  • 34.40 gm demerara sugar
  • 1 large mango, peeled and chopped
  • 40.00 gm caster sugar
  • 2 tsp grated lime rind
  • 40.00 gm boiling water
  • 9.00 gm gelatine powder
  • 125.00 ml light & creamy evaporated milk, chilled
  • 126.25 gm light coconut cream
Instructions:
  • Preheat your oven to 180°C. Brush won ton wrappers with egg white, sprinkle with demerara sugar, cut in half diagonally, and bake for 7-8 minutes until golden.
  • Puree mango until silky. Mix in caster sugar and lime zest. Dissolve gelatine powder in boiling water, then blend it into the mango mixture once cooled.
  • Whip light & creamy evaporated milk until fluffy. Blend in light coconut cream. Combine with mango mixture. Pour into glasses and refrigerate. Serve with crispy won ton wrappers.
