Quick and cozy mango rice pudding using frozen mango and pantry staples for an easy dessert.
Ingredients:
  • 150 g pudding rice
  • 4 star anise
  • 250 g frozen mango chunks
  • 4 tablespoons runny honey
  • 4 tablespoons Greek-style coconut yoghurt or yoghurt of your choice
Instructions:
  • In a pot over medium heat, combine the rice, star anise, frozen mango, 3 tablespoons of honey, a pinch of sea salt, and 700ml of water. Cook for 25 minutes until thick and creamy, stirring occasionally. Mix in the yogurt until creamy, then portion into bowls. Drizzle with the remaining honey before serving. Enjoy this easy and delicious dish!
