Enhance mangoes with zesty ginger and rich palm sugar for a bold explosion of flavor.
Ingredients:
  • 6 just-ripe mango cheeks
  • 45g palm sugar
  • 300g ginger
  • Fresh mint leaves, to serve
Instructions:
  • Cut each mango cheek diagonally in both directions with a small, sharp knife. Invert the mangoes to push out the cubes of flesh and place in serving bowls.
  • Enhance flavors by sprinkling with palm sugar and ginger, then let it sit for 5 minutes. Finish by garnishing with fresh mint leaves and serve promptly.
