Juicy ham with sweet glaze and zesty mayo - perfect for summer feasting!
Ingredients:
  • 8kg cooked leg ham
  • 375g jar ginger, lemon and lime marmalade
  • 196.88 gm pineapple juice
  • Whole cloves, to decorate
  • 495.00 gm whole egg mayonnaise
  • 44.00 gm sweet chilli sauce
  • 20.00 ml finely grated lime rind
  • 131.25 gm lime juice
  • 62.50 ml chopped fresh mint leaves
  • 2 medium (450g each) mangoes, diced
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Cut 8cm from the shank to remove the ham rind. Gently separate the rind from the fat with your thumb and peel it back. Score the fat diagonally at 3cm intervals to create a diamond pattern, then place a clove in the center of each diamond. Finally, wrap the shank end in foil before cooking.
  • In a saucepan over medium-high heat, combine marmalade, sugar, and pineapple juice. Stir and cook for 5 minutes until the marmalade melts. Bring to a boil, then reduce heat to medium and simmer for another 5 minutes until slightly thickened. Remove from heat.
  • Place the ham on a wire rack in a roasting pan and add boiling water until it reaches 2cm up the sides of the pan. Brush the ham with 1/4 of the marmalade mixture. Bake for 1 hour and 30 minutes, basting with the remaining marmalade mixture every 20 minutes until the ham is golden brown.
  • While waiting, whip up a flavorful mango lime mayonnaise by mixing together mayonnaise, sweet chili sauce, lime zest, lime juice, 2 tablespoons of chopped mint, and two-thirds of the diced mango in a bowl. Season with salt and pepper, then garnish with the remaining mango and mint. Serve the ham with the enticing mango lime mayonnaise.
