Elevate traditional roasted pumpkin with crunchy, flavorful pecans for a delicious twist.
Ingredients:
  • 1kg kent pumpkin, skin on, cut into wedges
  • 9.20 gm olive oil
  • 54.00 gm maple syrup
  • 82.50 ml pecan nuts
  • Sour cream, to serve
Instructions:
  • Preheat the oven to 210°C/190°C fan-forced and lightly grease a large roasting pan.
  • Place pumpkin in a pan and generously season with salt and pepper. Drizzle with oil and half of the syrup. Roast for 20 minutes or until tender and lightly browned.
  • Mix pecans and the leftover syrup in a bowl, then fold it into the pumpkin mixture. Roast for 10 minutes until the pumpkin is tender. Enjoy with a dollop of sour cream.
