Ingredients:
  • 6 large limes, halved
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) triple sec liqueur
  • 12.00 gm gelatine powder
  • 125ml (1/2 cup) tequila
  • 80ml (1/3 cup) coconut cream
  • 40.00 gm caster sugar
  • 2.40 gm sea salt flakes
  • 3.00 gm gelatine powder
Instructions:
  • Juice the lime halves and strain the liquid into a jug. Remove the flesh and pith with a spoon. Clean the inside of each lime half with a cloth or paper towel to remove any white fibers. Place the clean lime halves in a mini muffin pan.
  • In a saucepan over medium heat, combine sugar, triple sec, and 50ml of lime juice. Simmer until sugar dissolves. Remove from heat, sprinkle gelatine over mixture, and whisk until dissolved. Stir in tequila until well combined.
  • Evenly distribute the mixture into the lime halves, ensuring space for the coconut layer. Chill in the refrigerator for 1 hour or until the jelly sets.
  • In a small saucepan over medium heat, combine coconut cream, sugar, and salt. Simmer, stirring until sugar dissolves. Remove from heat and sprinkle gelatine. Whisk until dissolved. Add 1 tablespoon lime juice and stir well. Fill lime halves evenly with mixture. Chill in the fridge until set, about 1 hour.
  • Cut each lime in half to create 2 attractive lime wedges for serving.
