Marinated Feta Cheese

Mediterranean marinated tomato cheese - perfect for appetizers or dinner.
Ingredients:
  • 2 packages (8 oz each) feta cheese, cut into 1/2-inch cubes
  • 1 jar (8.5 oz) julienne-cut sun-dried tomatoes in oil and herbs, undrained
  • 3/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup capers, drained
  • 1 teaspoon crushed red pepper flakes
  • 4 sprigs (4 inches) fresh thyme
  • 4 strips (3 inches) lemon peel
Instructions:
  • Combine cheese, tomatoes, oil, vinegar, capers, and pepper flakes in a medium bowl until well combined. Evenly distribute the mixture into 4 half-pint jars with tight-fitting lids. Place 1 sprig thyme and 1 strip of lemon peel into each jar.
  • Chill in the refrigerator for a minimum of 24 hours. Serve at room temperature and store leftovers in the fridge.
